Trust yourself in the hands of this top chef

SUSHI Oyama is truly an icon when it comes to the exquisite Omakase (chef’s selection) experience in town. Chef Takeo Oyama — a seasoned Japanese chef with years of experience — never fails to impress with his skills and personal charm.

Each dish is treated with respect and the best ingredients are sourced from Japan. Every item on the Omakase journey is specially curated and designed by Oyama, originally from Hiroshima.

Expect an array of alluring flavors that will have you drooling between courses, from delicate and bright tasting starters to a stellar line-up of sashimi and sushi options. And you would never be bored if you are Oyama’s frequent guest — he knows each of his guests and their personal tastes.

Upon entering the cozy room where a 12-seat bar takes the center stage, I was immediately greeted warmly by the well-trained staff in kimono. The limited seats each evening are definitely a control factor in maintaining their impeccable service and guaranteeing everyone an exquisite, unforgettable experience.

Besides the front row seats to a visual show of Oyama preparing the food, diners are exposed to much more: the interactions, by the humorous chef, between him and the different guests every night.

A premium selection of appetizers was offered to start the journey along with equally impressive presentation. The freshness of the seafood was beyond doubt and sushi here relies primarily on seasonal offerings. Each course was followed one after another with precisely balanced flavors that increased as the journey progressed.

Some of the highlights included sushi of pacific saury, horse mackerel, tuna cheek and miso-cured horse mackerel.

Each sushi was remarkable and undeniably memorable.

The pleasure in enjoying the meal was not solely from the incredible handcrafted works of each item but also from the sake and wine pairing and the choice of plates and bowls on which everything was placed. Everything was presented with finesse and accuracy.

Dining here is always a no-frills experience as you entrust everything to the chef Oyama.
