The chuck wagon has arrived and barbecue is on

CHARLES Tse and Alice Chen, who both lived and studied in the States, missed the taste of succulent Texas barbecue when they returned to Shanghai.

So they decided to open a restaurant specializing in Texas food.

They first offered high-quality smoked meats at a tiny eatery on Julu Road, which gained a mostly expat following for the no-pretence comfort fare.

But after finding a two-level space on Yancheng Road, they opted for a more complete dining experience.

Unlike most overly decorated restaurants, Chuckville has a simple style.

The concept is clear: You’ll be drooling over the slow smoked Texas barbecue selection and classic, no-frills American snacks and side dishes.

Tse said he prefers to offer Texas-style barbecue because it uses minimal sauce but more salt and pepper to bring out the flavor of the meat. Many of the other types of barbecue focus on sauces, for example Kansas style uses a ketchup-based sauce and Carolina style uses mustard or vinegar-based sauce.

“I believe when a good piece of meat is used (in our case we use Australian Wagyu M5+ for our brisket), we should bring out the taste of the meat itself rather than rely on the sauce,” he said.

The brisket is marinated with a mixture of salt, pepper and chili for 24 hours, then cold smoked and gently grilled to order for several hours. It might just be one of the best cuts of meat you have ever tried.

The slow cooking process makes the meat tender and soft and busting with flavor.

It is just one feature on a menu of hearty meal options including seven varieties of BBQ items.

I also enjoyed the Good Ole’Country ribs and Sizzling BBQ chicken.

Both are marinated with the right amount of flavors and absolutely melted in the mouth. Chuckville prides itself on their barbecue but the extensive menu caters to different tastes as well.

There is a variety of starters, salads, side dishes and more hearty items like sandwiches and burgers to choose from.

Don’t leave the place without trying their Fried Oreo. The classic carnival treat every American kid grew up with is an indulgent, fluffy, golden-brown fried dough that yields a warm and melty Oreo crème center.

Chuckville is a casual restaurant that brings a touch of rural to city. It’s also kids and dog-friendly.
