Lighter options for summer dining

AS temperatures rise, appetites decline but these tasty treats are easy to make and are healthy delicacies to enjoy in early summer.

Mung bean and coil seed ice cream

Summer is the best season to consume mung beans, or green beans, because they provide a refreshing detoxification effect.

How to make: Put 20g of mung beans and 20g of coil seed together in a pot then boil with 500ml water.

Once the mung beans are cooked, add 40g whole milk powder, 60g white sugar and 5g starch, followed by one drop of vanilla essence and stir constantly.

Pour the mixture into an ice cream mold and place in the freezer. Once it has totally frozen, it is ready to eat.

Special haw drink

Haw, the red fruit of the hawthorn, is great for whetting the appetite, so it makes a refreshing summertime drink to accompany delicious cuisine.

How to make: Wash and remove the pits from 500g of fresh haw, while soaking 50g coil seed in water for 20 minutes. Then boil the haw and coil seed together until totally cooked and reduce to pulp in a blender.

Put the mashed mixture into a pot and boil with water. When the temperature reaches 50 degrees Celsius, add honey and stir. You can also add some red dates, chrysanthemums or other ingredients depending on your taste.

If fresh haw is not available, the preserved variety can be used.

In addition, it is recommended to use an enamel pot rather than iron or aluminum pots which may discolor the drink.

Delicious potato pie

If you're tired of breads and milk, this traditional potato pie is a breakfast alternative which is healthier and uses less oil.

How to make: Shred the potato and then add a little oil with salt, soy sauce, green onion and sesame oil, and stir well in a bowl. Then add enough flour to stick the potato mixture together. Heat a pan with oil then add the potato mixture and fry until golden brown on both sides.

Dough Ball Soup

With a smaller appetite, a dough ball soup with seafood and vegetables is a perfect lighter option.

How to make: Heat a pan with a little vegetable oil, stir-fry some pork and mushrooms until the flavors emerge, then add two bowls of water. At the same time, stir a half bowl of flour with water and make small dough balls, then boil a pot of water to cook the dough balls.

Once the dough balls and pork are ready, put them together in the pot and add eggs, vegetables and dried shrimp. Before serving, add extra sesame oil to enhance the flavor.
