Mutton eateries thrive in cold weather

As cold winter weather settles in, local mutton eateries in the Zhangze area of Songjiang have become a hot spot for many who hanker after a pot of steaming mutton soup to warm up.

Having mutton soup in winter is a tradition for people living in the area. The ubiquitous mutton restaurants are filled with families and friends sitting around a hot pot of mutton soup.

Three typical dishes, referred to as lao san yang by local people, are ordered by almost every table. They are a plate of chopped mutton, sliced mutton and a pot of mutton soup.

The sliced mutton is usually for takeout while the chopped mutton is eaten in the restaurant.

According to local diners, the chopped mutton costs some 150 yuan (US$24.79) per kilogram and the sliced mutton about 160 yuan. 

Booming sales

Xinming mutton restaurant near the Zhangze market is one of the most popular among local residents and has seen a big increase in customers with the start of winter.

Shou Xinming, owner of the restaurant, said 10 to 15 sheep are slaughtered every day to make the popular dishes and the employees wake up at 3am every morning to get prepared for a busy day.

The lamb marrow is also considered a delicacy for local people. Shou said a lamb bone costs 10 yuan.

With the demand for mutton on the rise, Shou even started his own farm to breed free-range sheep.

During the upcoming Spring Festival, Shou said consumption of no fewer than 40 sheep is expected each day at his restaurant.

Mutton is thought to be a healthy food that reinforces yang, or hot energy, which is considered a masculine force in Traditional Chinese Medicine.
