A Turkeyless Dinner in Shanghai

THE menu for Anna Maya's first Thanksgiving dinner promises to please your yin and yang as well as your stomach. Here's a sample of some vegetarian fusion dishes:

? Eight appetizer plate of Chinese happiness
Dishes include handmade sesame tofu, ginkgo berry and tofu with carrot and mushroom.
? Burdock and mushroom "meat" loaf with black bean
To replace traditional ham, Koikeda uses burdock root, which is popular in Japanese cooking. The vegetable will be cooked with mushrooms and served with black beans.
? Soy bean skin with sliced marinated vegetable
The soy bean works like a turkey. It has many layers and each is stuffed with a different kind of vegetable that has been marinated.
? Assorted sushi platter
Instead of having rice with fish in the middle, Koikeda uses rice and different kinds of fruit.
? Dessert platter
Two desserts, each with its own symbolism. First, persimmon with yellow millet. The orange persimmon with yellow on the outside is meant to convey the sun and represent the harvest . Second, a fig tart with brown rice and red bean. The red symbolizes blood and evokes life.
