Indigo鈥檚 new degustation delight

CHAR Bar and Grill of the Hotel Indigo Shanghai on the Bund welcomes new head chef Marco Santagata. And the 32-year-old Italian chef鈥檚 first adventure with the restaurant is a sensational afternoon tea experience in partnership with TWG and a five-course degustation menu introducing his unique style.

Located on the top floors of Hotel Indigo Shanghai on the Bund, CHAR Bar and Grill is known for its premium degustation experience complimented by the breathtaking view of the Bund skyline that overlooks both sides of the Hungpu River.

Santagata has 15 years of professional culinary experience, and he previously worked at top restaurants including the one-Michelin-star French restaurant Masa and two-Michelin-star Italian restaurant Mamm脿.

Santagata is a seasoned chef with versatile cooking styles, with knowledge in French, Italian, Japanese and Western cuisines, and he鈥檚 especially skilled at molecular cuisine. The chef has spent one month working on the two new menus.

鈥淚t鈥檚 my first time working with tea in his cuisine, and the process was an experiment of mixing and balancing different flavors,鈥 said Santagata. 鈥淲hile the five-course menu is much more French- and fusion-style, I balance the sauce with sour and sweet flavors because the combination is popular in local cuisine.鈥

Santagata鈥檚 new degustation menu at CHAR starts with a warm soup, as the apple smoked meat consomm茅 is poured onto a combination of cooked and raw beef tartare, and the dish is topped with black caviar for a burst of flavor. The appetizer is a seafood duet of scampi and oyster, both cooked to a tender texture.

The chef鈥檚 proud pasta dish is linguine with sauce and shellfish marinated with saffron, accompanied by peas and black caviar. For the main entr茅e, the fillet steak is cooked in sous-vide style to maintain the juicy and melting texture.

The dessert is an all-time classic Mont-Blanc served with rich dark chocolate ganache and orange ice cream for the balance of bitter and sour flavors.

The five-course degustation menu is 1,288 yuan (US$200) per person, with special offers available on the hotel鈥檚 WeChat Mall and other third-party platforms. Afternoon tea is 558 yuan per set for two people, both are inclusive of service charge and VAT.
