Barbecue sauce for grilled ribs
BEFORE it gets too hot and humid in Shanghai, we take advantage of the perfect weather, get our grilling tools out, grease the grill and invite our friends over for some BBQ ribs. Jesse's BBQ sauce is fantastic!
He incorporated some Chinese seasonings into his sauce and the result is one of the best we've had. For the ribs, Jesse slow cooks them on the grill with mesquite apple wood chips for hours. The ribs are tender and juicy; the meat slides right off the bone. Slather with the BBQ sauce and they are sure to please. The BBQ sauce also works well with chicken and fish. You can pick up all of the ingredients at City Shop, City Super or Pine's Market.
Jesse's Kick Ass BBQ Sauce
Ingredients: 1 slice bacon, chopped and rendered; 2 onions, chopped; 3 cloves garlic, minced; 2/3 cup water; 1/2 cup canola oil; 1 cup maple syrup; 1 cup tomato paste; 1 1/2 cup ketchup; 1/3 cup soy sauce; 1 cup Chinese sweet bean paste; 1 cup white vinegar; 1/4 cup Worcestershire sauce; 1 teaspoon liquid smoke; 1/2 cup brown sugar; 3 tbsp ancho(cq) chili powder; 1 tbsp cumin; seeds of 6 dry red chilies; freshly ground black pepper.
Preparation:
1. Chop and render the bacon in 8-quart saucepan. Add canola oil, garlic, onion and all the dry ingredients, sauté 2 min on medium-high heat to open up the flavors.
2. Turn the heat to low, add all of the wet ingredients and simmer for 30 minutes.
Reduce the sauce to desired consistency.
