Cooking journey leads chef to Peace Hotel

Executive chef at the Fairmont Peace Hotel

Jeremy Harris lives for food. His culinary adventure started in 2001 when he apprenticed at DC Coast Restaurant, rated as one of the District of Columbia’s best fine dining establishments. Harris worked under star chef and restauranteur Jeff Tunks.

After graduating from the prestigious Culinary Institute of America in Hyde Park, New York in 2003, Harris hosted and participated in the American Culinary Olympic Team. He also served as banquet chef at the New Orleans Marriott for a week-long VIP Olympic conference.

Moments like these turned Harris into a leader of the kitchen, where he conceives, creates and delivers dishes that have impressed even the most knowledgeable elites in the food world.

Over the course of his career, Harris has received numerous awards and accolades in recognition of his talents. These include being named on the Top Five Most Passionate Chefs in Southeast Asia list by Hospitality Asia Magazine, as well as his appointment to Marriott International’s Asia Pacific Culinary Advisory Board.

With a career that’s taken him from West to East, Harris’ years in Asia have allowed him to understand the needs of many different guests.

The Fairmont Peace Hotel offers guests an all-around dining experience, which includes cocktails at the legendary Jazz Bar, afternoon tea served in the Art Deco-themed Jasmine Lounge, sumptuous Sunday brunch on the Bund in the Cathay Room, as well as classic Shanghai cuisine at Dragon Phoenix.
