Courtyard by Marriott offers room for creativity
Eric Wu
Executive chef at Courtyard by Marriott Shanghai Pudong
Eric Wu joined Hilton Jinan Hotel in 1987. Later, he traveled to Japan, Vietnam and several other countries to study the local cuisines and cooking methods.
“My memories of working at the Hilton mean a lot and had a huge influence on me. I saw the Western chef’s rigorous attitude and their attention to details, which made me want to do the same,” Wu said.
When he came back from his travels, Wu joined the opening team of the Grand Hyatt Hotel, where he was executive chef of 56 Floor. He then worked at MINYA Hotel and now is the executive chef of Courtyard by Marriott Shanghai Pudong.
“Courtyard gives me more room to be creative. This is the most valuable things for me. Once a hotel has its own unique character, it will be successful,” he said.
In the kitchen, Wu is brave and likes to have fun. He combines Chinese elements with Western food, using traditional Chinese spices to cook his distinctive dishes.
At Courtyard Pudong Spices Café, an all-day restaurant serving daily breakfast and weekend dinner buffets of Eastern and Western dishes highlighting the seasonal products. An la carte menu is available for lunch and dinner as well.
