Fusion purveyors Glasshouse come to Xintiandi

Hong Kong-based restaurant managers Gaia Group are bringing a twist of their own to Shanghai’s fusion dining scene with Glasshouse.

After the success of Glasshouse’s first location in Hong Kong’s IFC Mall, Central, a second location has opened at Xintiandi.

The restaurant’s spacious dining area is decorated with hanging plants and features a light and airy atmosphere that blurs the boundaries between the interior and exterior world. This, combined with well-appointed furnishings and an open-kitchen, gives the restaurant a pleasing contemporary look.

Unlike restaurants which highlight the taste and vision of one head chef, Glasshouse has a diverse cooking team that work together to bring its fusion offerings to life.

The menu features a selection of Asian recipes with Western twists — and vice versa. Many of these dishes are made with whole-wheat pasta, wild fish and fresh herbs. These ingredients are skillfully combined using Eastern and Western cooking techniques, taste preferences and presentations.

On my visit, I followed the manager’s recommendation and ordered crispy fries with truffle mayo (48 yuan/US$7.5).

The fries were super crispy and paired well with the truffle mayo. The roasted duck and cucumber rice paper roll with sweet prune dressing, however, was relatively lacking in flavor.

Black ink noodles were creatively used as a base for pad Thai. While obviously not a classic pad Thai, the version served up at Glasshouse was inventive nonetheless. It was topped with classic Chinese ingredients, such as sliced red and green bell peppers, dried tofu and onion. Though a bit oily, the rich layering of ingredients elevated the overall taste experience.

The presentation of the Banana creme brulee, moscovado sugar, dark coffee (78 yuan) was quite a show. Served in a shallow pan with banana slices on top, a shot of rum is poured over it for a flambe. Though without the usual crisp, caramelized crust that sits atop the delicate custard, the dark coffee juxtaposed with the sweet custard and bananas created an unusual and interesting flavor.
