Guaranteed to put a spring in your step
IT'S spring and is beautiful out! Jesse and I love taking our dog for a stroll in the heart of the former French concession on a sunny weekend.
We follow a relaxed routine. First, we enjoy a simple breakfast on Anfu Road, and then we walk around the block to Wuyuan Road for a fabulous traditional Chinese massage.
Afterward, we visit our sweet "Avocado Lady." It's always fun to check out what she's brought in for us each week. From her we can pick up everything from avocados to plain yogurt, and I think she has some of the best produce around.
Here's an easy, colorful and healthy recipe utilizing beautiful spring produce.
Ingredients: 3 ripe avocados, peeled and seeded; 7 cherry tomatoes, quartered; 1/2 small onion, finely minced; 4 tbsp good olive oil; 1/2 juice of a lemon; 1 bunch fresh arugula, loosely packed, about 2 cups; coarse gray salt, fleur de sel; freshly ground black pepper
Preparation:
1. In a mixing bowl, whisk together the olive oil, lemon juice, salt and pepper.
2. Cut the avocados into large dices. Quarter the cherry tomatoes.
3. Add the avocados, cherry tomatoes and minced onion to the vinaigrette in the mixing bowl.
4. Mix all the ingredients together until well-coated and creamy. This should take around 2 minutes.
5. Spread a bed of fresh arugula on a plate, place the avocado mixture on top and serve immediately.
