Hand-made dim sum shaped like piglets and mushrooms

VARIOUS choices of handmade dim sum at reasonable prices and in a relaxing family-style dining environment is what you will find at Tang Palace Canton Tea Room. Dim sum, which means “touching the heart” is a Cantonese-style dish from southern China.

Seven days a week, the restaurant’s 150 seats are filled with a loyal clientele from students to the elderly.

What first draws many diners and the shape of the restaurants buns, which look like the stuffing they are filled with.

Right when you enter, you will see a number of pig-shaped buns in stacks of bamboo baskets. Chef Hua is committed to making his dim sum from hand, stuffing it with barbecued pork seasoned with honey, five-spice powder, red fermented bean curd, dark soy sauce, hoisin sauce and rice wine. Three pork buns cost 19 yuan (US$2.9).

Besides pork buns, the mushroom buns and walnut buns are among the most popular on the menu. The walnut buns also look like a walnut and taste delicious.

The mushroom buns are stuffed with black truffle and xianggu, a delicate-flavored mushroom.

“Freshness and making them by hand are the keys to our success,” said Chef Hua. “We make sure all the ingredients are sourced locally.”

The roast pigeon is a must-try. Dipped in a home-made sauce made with more than 10 kinds of spices including anise, cinnamon and leaves for half a day, the pigeons are roasted closer to the fire for 30 seconds intervals at a time. The chefs make sure every part of them is evenly roasted.

“In order to keep the tender and juicy texture of the pigeon, we choose the fresh pigeon according to strict standards for weight, shape and age,” said Chef Hua. A roast pigeon costs 24.8 yuan.

Other dishes we can recommended are vinegar chicken leg with a sweet-and-sour taste, baby yellow croaker stewed with chicken soap and shrimp which keeps the original taste and creates a nice combination of chicken and seafood, and steamed buns stuffed with rose jam and mashed red beans as well as the popular abalone crisp buns. And, as a meal isn’t finished without a dessert, we recommend that you try the chilled mango cream with pomelo and pear stewed with dried tangerine peel.
