Korean buffet more than kimchi

KOREAN cuisine is far more than kimchi, ginseng soup and Korean barbecue, as the buffet spread at The Longemont Shanghai this month demonstrates.

"Korean cuisine is much more diverse than many people outside the country expect," says Wolfgang Uuebler, executive chef at The Longemont Shanghai, who has worked in South Korea for many years. The country has abundant and varied produce, from seafood and vegetables to quality meat due to its complex geography and particular climate.

This month, in hotel's 02on2 All Day Dining Restaurant, customers can sample a buffet featuring Korean cuisine covering most of the representative Korean dishes.

Koreans love their vegetables, both fresh and pickled, and kimchi is a pungent and fiery favorite. Kimchi is a pickle dish made from various vegetables, such as cabbage, radish, cucumber and other vegetables, known fits briny, sour, spicy and slightly sweet taste.

Kim Sung Gu, guest chef from Lotte Hotel in Seoul, uses cabbage, radish and garlic in making kimchi.

It is freshly made and refrigerated for at least 48 hours so ingredients can fully absorb the flavor of the pickle sauce, acquiring a crispy texture and refreshing flavor.

Some buffet soups and salads are also made from vegetables, such as bean sprout salad, spinach salad and kimchi jjigae, a kind of soup made with kimchi, scallions, onions and diced tofu.

Korean barbecue is a signature dish. Thinly sliced beef is first marinated in the chef's sauce and then grilled, making the meat flavorful and juicy.

Served in the authentic Korean way, the beef is dipped in barbecue sauce, wrapped in a lettuce leaf and eaten.

Offerings also include Korean pan-fried dumpling with crunchy skin and tender meat filling; Korean cold noodles and colorful bibimbap, a rice mixed with sliced carrots and sprouts.

They also offer authentic Korean beverages, including sweet and smooth rice wine that goes well with spicy kimchi, and pure soju (distilled beverage). A kind of fruit vinegar and pomegranate juice is also on the menu.

On Friday and Saturday, diners get a complimentary first glass of wine, soju or vinegar-pomegranate juice.
