Lunch sets come to Jade on 36

JADE on 36, a restaurant in the Pudong Shangri-La Hotel, launched a new business lunch set menu this week, offering working guests both value and a fine dining experience.
Located on the 36th floor, the restaurant is one of only a few in Shanghai where guests can enjoy a 180-degree view of the Huangpu River and the Bund.
One-, two- and three-course sets are available, with starters including soup, fresh salad, tartar and egg dishes. Main courses include fish, meat, pasta and vegetable options.
“The new menu is aimed to open Western food to a larger public and show that we can prepare accessible comfort food,” says Jeremy Biasiol, chef de cuisine at the restaurant.
Having previously run his own Michelin-starred restaurant, French chef Biasiol took up his new appointment at Jade on 36 last December.
Biasiol has also previously worked with Alain Ducasse, the only chef in the world overseeing three Michelin three-star restaurants.
Chef Biasiol says he also intends to add more local touches and freshness to his new menu.
“As much as possible, we are trying to orient toward local ingredients,” the chef says.
For example, local vegetables are used in the salad courses to ensure farm-to-table freshness.
Some meats and seafoods though are sourced globally to ensure the highest possible quality. For example, Biasiol uses Norwegian salmon to make tartar, which is served with cress salad and crispy croutons and flavored by a sweet-and-sour pickle sauce.
The chef recommends starting with his tomato salad and a Bloody Mary, followed by a main course of slow-cooked pork or shepherd’s pie.
“The pork is rich in flavor and the pie is suitable as the weather gets warmer, which gives me space to play with local ingredients,” the chef explains.
The business lunch menu is available on weekdays between 11:30am and 1:30pm. One course set is priced at 108 yuan (US$17.4), while two- and three-course sets cost 138 yuan and 168 yuan respectively. A 15 percent service charge will be added to each order.
