Offering skillful take on top-quality ingredients

Sushi Bar, Pudong Shangri-La East Shanghai is a two-story restaurant accommodating 32 diners run by Nadaman, one of the most famous Japanese dining brands. It serves sushi and bento boxes, its light wood and full-length windows creating a homey, modern ambience.

Quality ingredients are a highlight, with fish and shellfish imported from Nagasaki three times a week. The tuna and snapper are smooth yet firm, the salmon rich, the scallops buttery and the shrimp melt-in-your-mouth. Whether nigiri or sashimi — raw seafood without rice — the pure quality of the ingredients has center stage.

The chefs’ sushi skills are also worth mentioning. Their nigiri, simple seasoned rice balls topped by raw fish slices, are exquisitely crafted. Tuna is slightly scored for the ultimate textural experience. Each rice ball — firm enough to be easy to eat yet not too chewy — is seasoned with the perfect balance of vinegar and wasabi.

Tradition also holds sway here.

Head chef Sato Shigeru, with more than 20 years’ experience in Japan, says that while he’s open to slight fusion techniques, he avoids very radical sushi options.
