Pungent black, white peppercorns add spice

DRIED ground peppercorn has been used as a condiment and medicine since ancient times. Black pepper is said to be the world's most-traded spice.

In traditional Chinese medicine, both black and white pepper are considered warm (yang energy) foods, and since spring is here, this is a good time to use pepper in cooking to help expel the chill that has accumulated in the body over winter.

Black pepper is the dried unripe berry of the pepper vine and in traditional Chinese medicine it is considered especially beneficial to the kidneys, considered the center of the body's yin and yang.

White pepper is the dried ripe berry, which is milder than black pepper. In TCM it is used to treat stomachache associated with catching cold.

Traditional Chinese cuisine favors white pepper, which is commonly added to soups and noodles. Shanghai Daily picks some peppercorns from Ole' at Pudong Kerry Centre.
