Vibe of American cities revered at the BundPatsy Yang

Located on the building’s top floor, the Pop concept is split into Pop American brasserie, Pop Bar and the so-called Whisper Lounge, all featuring an impressive view over the river, making it perfect for a date or a night out with out-of-town visitors.

Pop American brasserie is an all-day dining restaurant that evokes 1970s New York nostalgia. Classic red-button leather booths and Bordeaux and beige chairs with wood or marble tables offer a comfortable place to sit while creating a warm, unpretentious dining ambience.

The menu reflects the restaurant’s easy-going, American spirit and presents a refined version of comfort eats. The dishes were created and are being prepared by French chef David Chauveau, who has more than 20 years of experience in both brasserie and fine dining in Europe, the US and Asia. In addition to American classics, the menu includes a selection of grilled meats and fresh shellfish as well as assorted crustaceans.

The appetizer menu includes a range of cold and hot dishes. We recommend the tomato salad with fresh Italian burrata cheese, pine nuts, pesto and balsamic (118 yuan/US$18.2) and the shrimp and avocado cocktail with citrus dressing (98 yuan) as they are both light dishes that make a good starter.

The mains also stay true to the American theme, with more than generous portions. The 850 gram Bone-in Ribeye comes with grilled vegetables and fried onion rings (1,080 yuan for two people) and is perfect if you’ve brought a big appetite.

The restaurant also offers a set sunset dinner, with four courses at 240 yuan, exclusive of a service charge for orders between 5 and 6pm.

Pop Bar, which opened in June, is located on the east terrace of the rooftop and inspired by a the funky lounge scene of 1950s Miami.

Although House Music dominates the bar, you’ll also find the influence of Miami’s Latin, Hispanic and Caribbean population reflected by the tunes as well as the drinks and food.

As the last part of the Pop trilogy, Whisper was unveiled recently.

Its interior design replicates a French boudoir — an intimate salon restricted to intimate friends. Whisper provides a warm evening ambience where bartenders blend classic and seasonal ingredients with quality liquor.

In a space decorated with red fabrics rich in pattern and texture, the center piece is the original fireplace from 1916 when the building was called the Union Building.

As a VIP lounge with access restricted to Whisper card holders, the vibe celebrates decadence, offering an impressive list of Champagnes, Whiskeys and historical cocktails that honor New Orleans and its French heritage.

Inspired by the most “French’’ city in the US, Whisper offers a list of classic cocktails New Orleans is famous for, such as the Sazerac (98 yuan) that has stood the test of time. It contains a classic mixture of Martell Noblige Cognac, Absinthe, Angostura Bitters, and sugar. French 75 (158 yuan) is another must-try for bubbly lovers using Beefeater Gin, Perrier Jouet Champagne, sugar and lemon juice.

A list of newly crafted cocktails are also on offer, including the vodka-based Dita’s Kiss and Fleur de Lys.
