Looking for gems off the beaten path

NATIONALITY: French

Profession/Title: Pastry chef at Mandarin Oriental, Sanya

How often do you travel? Two to three times a year

Objective of travel? Explore the world, experience cultures, utterly relax, and to feel inspired.

Favorite traveling style? No schedule. Traveling is about relaxing and exploring. Often I’ve found incredible restaurants and food off the beaten track.

When I finish a journey, I always…

Try and reflect on what I’ve seen during my experience.

Q: What does traveling mean to you in your life?

A: Traveling offers me the opportunity to discover new cultures and lifestyles, meet new people, and uncover hidden culinary gems.

Q: Do you prefer to travel alone or with family/friends?

A: Most of the time, I prefer to travel with my friends.

Q: What kind of hotel will you choose to stay during a trip?

A: Superior location, level of service, and interesting features are the key reasons why I choose a hotel.

Q: What do you value most when choosing a hotel?

A: As a chef, I consistently try to surround myself with impeccable levels of service and unique culinary options. I value a unique and quality culinary experience above all.

Q: What facility or service do you think is necessary during a hotel stay?

A: The main objective of my travel is to relax, refresh and explore, so a quality concierge service is essential. I want to be able to explore every corner of a destination and their local knowledge is something I value immensely.

Q: What do you expect most of a hotel for an enjoyable stay?

A: If a hotel’s attention to detail in their service can surprise me in a good way, I’m assured an enjoyable stay.

Q: What do you usually do during your stay apart from resting in your room?

A: I eat in every available food outlet in the hotel, as well as lounging by the swimming pool for at least a couple of days.

Q: How do you book a hotel at an affordable room rate?

A: I conduct a very thorough search online for any distinctive packages or special room rates.

Q: Share with us an unforgettable stay in a hotel.

A: When I traveled to Dubai a couple of years ago, I was able to stay at the Atlantis, The Palm Resort. The beauty of the resort combined with their impeccable service is partly what inspired me to join a resort like Mandarin Oriental, Sanya.

Q: What hotels are you looking forward to staying at in the future?

A: When our MO properties in Milan and Marrakech open, I will be the first through the door.

Q: What is your favorite destination and why?

A: St Lucia, because for me, St Lucia is paradise — a destination where I can truly feel at peace.

Q: What’s so special about it?

A: If I had to pinpoint a few specific things, the weather, the magnificent ocean views, the unique island lifestyle, and the feeling that I’ve escaped the stresses of life. Sort of like Hainan Island really.

Q: What necessities do you have to take when going to St Lucia?

A: Aside from my camera, whenever I go to St Lucia I always go snorkeling. Delving beneath the ocean and entering a whole different world is such a calming and humbling experience.

Q: What do you do upon arriving?

A: Find a map and work out the markets and restaurants that I simply must explore.
