Crayfish takes spot on menu

CRAYFISH from Xuyi, a city in Jiangsu Province, are coming to the Expo next month.

Officials from Xuyi's crayfish association said they are making plans with the Expo bureau to offer this popular food in special stores on the Expo site.

The price of the crayfish in the site will remain the same, or even less, than that sold around the city, which is 118 yuan (US$17) per kilogram for big crayfish weighing more than 50 grams.

"We intend to offer customers some discounts on the crayfish in the site," said Wang Nanqing, in charge of crayfish sales at the Expo.

The Expo fare will feature crayfish cooked in a boiling style called "13-flavor boiling," in which the crayfish are boiled with more than 20 traditional Chinese herbs.

All the crayfish will be processed locally and checked by Expo officials before being delivered into the site.

Crayfish are raised in freshwater ponds, streams and rivers. Xuyi is a major crayfish supplier to the city.
