Tons of mushroom dyed with industrial salt

HEALTH authority in Zhengzhou, capital of Henan Province, has seized 10 tons of mushroom tainted with industrial salt, a cancer-inducing chemical substance.
The contaminated mushroom in more than 1,500 plastic barrels was found in a food factory in Shuangqiao Village on Saturday. The mouldy and reeking mushroom in open barrels attracted swirls of flies, the local Dahe News reported today.

Officials said the mushroom was at least two years old and was sent to the factory for "salvation" by mixing them with sodium nitrite and hydrochlorous acid, two toxic chemicals for industrial use, which can give the mushroom an appetizing pink look but pose hazard to the health of its buyers.

The sodium nitrite, also known as "industrial salt," is widely used to prevent the growth of botulism-causing bacteria in many industrial applications. However, some food manufactures also use it to substitute for edible salt, or sodium chloride, to save cost.

The sodium nitrite can combine with other chemicals to form nitrosamines, which can paralyze respiratory nerve system, causing severe dizziness, palpitation and death.
