ONE of Shanghai’s longest-running sports bars, The Camel underwent an upgrade to an American-style barbecue restaurant and bar, renamed The Smokehouse x The Camel. Located in the downtown area between Xuhui and Jing’an districts, it is still the perfect spot for watching sports and after-work get-togethers.
Todd Pearson, managing director of the Camel Hospitality Group, said his company recognized there was a lack of authentic American barbecue done the right way in Shanghai, and feel it pairs perfectly with their venue and sports-watching crowds.
“We thought it was a marriage that would really work here,” Pearson said.
The new menu was created by pit master Matty Waters, who runs the smokers. Waters, from Kansas City in the heart of America, has won numerous prestigious barbecue awards around Shanghai, including “Grand Master: Overall Winner” at Bubba’s 7th Annual Shanghai Barbecue Cook-off.
He makes delicious barbecue with a strong focus on the famous Kansas City BBQ style — using the low and slow cooking method where meat is smoked at a low temperature for up to 12 hours to perfection.
Kansas City is one of the largest cities in the central United States, and its barbecue is influenced by its surroundings. With a long tradition of rich, dry-rubbed meats that are smoked and cooked slowly to perfection then covered in spicy sauces, Kansas City has become famous for its delicious barbecue.
One thing that sets Waters apart from the rest is that there are no limits or rules. The Smokehouse doesn’t confine their love of barbecue to one style of sauce, rub or meat. Kansas City barbecue is characterized by its use of a wide variety of meat: pork, beef, chicken, turkey, lamb, sausage and sometimes even fish.
Here, Waters’ motto is “Kansas City style, world inspired.” He uses USDA brisket and pork spare ribs traditionally served on BBQ platters. The hearty serving of juicy and tender brisket and fall-off-the-bone ribs will surely tantalize your taste buds.
Tasty pork belly and succulent pork spiral sausages are also ideal options to satisfy one’s meaty cravings, and the tangy homemade KCQ barbecue sauce is lip-smacking good.
There are also a variety of smash burgers made with fresh ground beef and a selection of toppings.
For example, the “Burnt Ends Burger” is topped with the crown jewel of barbecue — brisket burnt ends, pickled slaw and spicy candied jalapenos. A slow-smoked then deep-fried chicken sandwich is another favorite.
