Food safety cameras
ALL restaurants in the West Lake area will be equipped with video monitoring systems to ensure food safety in kitchens, government officials said this week.
Kitchens in Zhejiang Hotel, Lingguang Restaurant and Yanzhong Restaurant have already had systems installed.
With the monitors, supervisors can watch how food is prepared and kitchenware kept clean. Vegetables, meat and fish are required to be washed in separate water. Cooks are required to wear uniforms and use different chopping boards for raw and cooked foods, under industry regulations.
Footage will be kept for a week for supervisors to review and food safety violations will be reported, say officials.
There are more than 200 large restaurants in the West Lake area, serving hundreds of thousands of diners each day.
