Indulging instinctive appeal of sizzling fare
LITTLE wonder that barbecues seem to have an instinctive appeal, for the humble BBQ is as old as human beings (and indeed, older), when our ancestors would sit around campfires feeding on sizzling meat.
People are still in love with this ancient cooking style, though nowadays simple and safe grills provide opportunities for no-fuss barbecues.
Several years ago, there were designated zones in public parks for barbecues in Hangzhou. However, the local government has scrapped most of those due to environment considerations.
But BBQ fans needn't be despondent, for there are numerous restaurants where they can get their fill of charcoal-cooked goodies - without the possibility of being caught in a summer downpour.
In some, the food cooked directly over fire, usually on a grill, while in others, the food is put on an iron griddle or stone panel, heated by fire beneath.
Another classification of BBQ is based on the ingredients - roast meat or grilled seafood. Here, Shanghai Daily recommends some sizzling Hangzhou barbecue joints.
Roast meat
Roast meat was once known as "tent food" as it was the traditional food of nomadic people from northern China who lived in tents and herded livestock.
Meat used includes pork, beef, mutton, chicken, goose and venison.
Before roasting, the meat is marinated in various seasonings, including salt, monosodium glutamate, ginger, garlic, sugar, shredded meat powder, corn starch and homemade sauces.
The period of marination depends on the variety of meat. Generally, chicken and goose wings and feet have require 20 minutes, while 10 minutes suffices for other cuts.
While at roadside food stalls, vendors offer chunks of meat on bamboo skewers, more convenient for diners on the go, at formal restaurants, diners roast the meat themselves.
The technique is important for producing tender meat.
First, brush oil on the meat, then place it on a hot grill or griddle.
As the meat cooks, us chopsticks or tongs to turn it. Repeat the process several times. Remember, not to burn the meat, as this is carcinogenic.

At midnight, the seafood BBQ restaurants in Hangzhou are full of diners. Plates of delicately grilled scallops, oysters and abalone herald the beginning of late nightlife.
Among all of these barbecued seafoods, grilled scallop is the most famous.
The scallop meat is marinated in salt, garlic, fermented soy bean sauce, white alcohol spirit, white pepper and starch, blending with Chinese vermicelli. The whole scallop is then put on the BBQ grill and roasted.
For seafood BBQ lovers, there is good news for them. The 4,000-square-meters Huanglong Seafood Stall reopened in late May near the Dragon Stadium.
The new seafood stall complex includes 80 parking spaces and has air conditioning. In order to ensure the sanitation and food safety, staff from Xihu Health Bureau run daily inspections and supervision.
It is open from noon to dawn. As fresh seafood arrives at around 3pm, a late afternoon or evening visit is recommended.
