Making a break with tradition
HANGZHOU, in east China’s Zhejiang Province, has long been known for its picturesque scenery and traditional dishes like beggar’s chicken, vinegar fish and Longjing shrimp. Of course, the city’s local dining scene has not been immune to changing tastes and the passage of time. Below are a list of some “new” foods that have made their way onto the local dining scene. In certain instances, new dishes created at a single restaurant quickly made their way onto menus elsewhere.
For visitors to Hangzhou, we recommend breaking away from the traditional dishes that one often sees in guidebooks and giving some fresher tastes a try.
Beggar chicken and Longjing green tea, two pillars of Hangzhou cuisine, combine in this new favorite.
While beggar’s chicken is wrapped in lotus leaves and cooked over an open fire, cooks at Grandma’s Kitchen prepare this new dish by using tea to first boil and then roast preserved chicken meat.
Meanwhile, cooks at Bailu Restaurant prepare this dish by simply roasting chicken in tea leaves, a process that results in a drier, crispier final product.

Wrapped in white glutinous rice and stuffed with mango and cream filling, West Lake snow ladies are adapted from Japanese daifuku, a traditional pounded rice confection.
Since first being introduced in Hangzhou, these bite-sized morsels have become a popular desert item on local menus.

After first appearing at the Green Tea Restaurant, this treat of hot bread filled with ice cream grew quickly in popularity. The dish is often served as a dessert but can make for a filling snack. Be warned though: this item is often shared, meaning that many people may find it too big to eat by themselves.
Elsewhere, Hangzhou Restaurant has its own take on the dish’s basic concept. Known as Sexy Pumpkin, this dish contains hot pumpkin served inside of warm bread with ice cream on the side.

Zao Feng Nian Jian is said to have been one of the first restaurants in Hangzhou to serve slow-boiled chicken feet served in sauce. The tasty talons here are boiled until the skin and meat can easily come off the bone.
Several other local establishments offer chicken feet prepared and served in the same manner, including Jiang Nan Yi, Nong Tang Li and Yuan Zi. Meanwhile, Xin Long offers a different take on this new favorite — here marinated chicken feet boiled in soy sauce and served dry have been a hit with diners.
