Learn how to make some dim sum delights
VISITORS to Nanxiang Old Street will probably be attracted by the clover cake which is sold at the entrance to Jimeilou Restaurant. In Jiading, many local families prefer to make dim sum at home, and the clover cake is one of their favorites. As a way to understand and experience the food habits of local residents, we'll teach you how to make two kinds of dim sum that Jiading people often make.
Clover cake (2Y铆路卤y)
In this season, clover is a favorite vegetable among Jiading people. Clover and flour are the two main materials you'll need to make the cake. First, the clover should be washed and cut into tiny pieces. While airing the clover, add some water to the flour to make a paste. But try not to make it too watery. Add the clover to the paste and stir in salt and gourmet powder. Once everything is mixed together, divide the paste into small round cakes and fry in shallow oil over a low heat. When it turns golden, turn the cake over and fry the other side until it turns golden as well.
If you feel there's too much oil in the cake, you may use an oil-absorbing sheet. And the best way to appreciate a clover cake's fragrance and deliciousness is to eat it while it's still hot.
Spring roll (鈥瞣?铆)
This is not only a traditional dim sum for Jiading residents, but also for Chinese people in general. And since the filling of spring rolls can be changed at will, you're sure to find one to suit your taste.
Shrimps, shredded pork, eggs, leek and dried bean curd thread are typical fillings. Vegetarians can use carrot and mushroom. Once you've chosen your favorite fillings, stir-fry them in oil.
Place the stir-fried filling on the corner of a pre-made spring roll wrapper which can be bought in the wet market, rolling half of it forward, folding two other corners to the center and finally pasting the last corner into the center with some water. When the folding work is done, fry the roll till it turns golden.
Fruit is also a good choice as a filling. Pick a fruit with soft flesh such as banana or papaya for a sweet spring roll treat.
