Meaty idea makes cultural heritage list

A cooking technique for Jiangqiao mutton was recently added to the third batch of Shanghai Intangible Cultural Heritage List. Jiading District now has 20 items on such a list, among which three are of state level, eight city level and nine district level.

Jiangqiao mutton is very popular among Jiading residents. It rose to fame at the end of the Qing Dynasty (1644-1911). Due to the abundant grassland in Jiangqiao, nearly all the residents raised sheep. Thus Jiangqiao was nicknamed "The Town of Sheep."

Chef Zhu Wenbin, who created the cooking method for Jiangqiao mutton, came from Nanxiang but due to the high-quality and plentiful supply of sheep in Jiangqiao, he moved to Jiangqiao and opened a restaurant. Because of its special flavor, the dish was soon called Jiangqiao mutton.

Now Zhu Dongming, the fourth generation of Zhu's family, continues to make the dish. The mutton can be cooked through various dishes via stewing and frying.

Dongming Mutton Restaurant, which was named after the chef's given name, was established in 1984. The restaurant has a nice atmosphere and diners can choose to eat here or take away. The mutton and the noodles are delicious and reasonably priced.

When mentioning Dongming Mutton Restaurant's famous dishes, most old people in Shanghai get excited. Just thinking about the yummy mutton often brings back good memories.
