Traditional favorites to tickle your taste buds

IN southern China, rice is a staple, but items made of flour, such as noodles, steamed buns and dumplings, are still an indispensable part of people's lives. Of these, Nanxiang xiaolongbao steamed bun is famous even outside China; wonton is one of many people's favorite foods; and gnocchi can often bring back happy childhood memories.

Let's visit several shops with food made from flour in Jiading.

Famous xiaolongbao

How long is it since delicious food excited you? Come and try the xiaolongbao, a small steamed bun stuffed with pork, in Nanxiang Town. Eating Nanxiang xiaolongbao is not only enjoyable but also an art.

Freshly steamed xiaolongbao are shiny and smooth. You should eat the xiaolongbao like this: move it gently, lift it slowly, bite it into a small hole and then suck the soup from inside. But you should be careful when eating it as it is very hot. You can also have some vinegar and slices of ginger when eating the buns.

The Nanxiang xiaolongbao has more than 100 years of history, famous for its thin wrapper, big filling and mouthwatering taste. Its filling is made of pork, ginger, salt, soy sauce and jelly from pig's skin. Its wrapper is made of flour.

To eat authentic xiaolongbao, you should go to Guyiyuan Road in Nanxiang where there are more than 10 restaurants and they have all been there for more than 10 years.

One of the most popular restaurants closing to this street is the Guyi Garden Restaurant.

Delicious wonton

Xishengyuan, the only franchise store of a century-old Wuxi Xishengyuan store in Shanghai. It specializes in Wuxi xiaolongbao and wonton.

Wonton has a history of more than 1,500 years in China, as recorded in a book called "Collection of Yan Zhitui" in the Sui Dynasty (581 AD-618 AD). "Today's wonton, shaped like a half moon, is popular everywhere," as written by Yan.

The process of making wonton seems simple, but it requires skill. Firstly, chop vegetables and meat into mince and add ginger, shallots and seasoning. Secondly, use wrapper made of flour to wrap the filling into an ear shape. Then boil the wonton in water until fully cooked. Finally a bowl of wonton filled with soup is ready to be served. Wonton soup has several tastes, such as dry shrimp soup, spicy red oil soup and pig bone soup. The recipe for the wonton's filling is the store's secret.

Gnocchi memories

For many Shanghai residents, gnocchi evokes memories of childhood - watching mom standing next to the stove and putting a thick lump of gnocchi into the pot and seeing them dancing in the boiling water. Vegetable and sliced pork were also added to the soup. In a short time, a bowl of delicious gnocchi soup was ready to be served. Today gnocchi soup also appears on the menu of many restaurants.

Gnocchi Soup Eatery is not big and can only hold six square tables. The female boss from Northeast China's Heilongjiang Province said all the gnocchi was hand-made at the previous night. Soups were boiled more than six hours with pork, pig bone and herbs to make it both tasty and healthy. There are more than 20 types of gnocchi in the eatery.
