A matcha made in heaven
WITH its fresh, newly picked taste, spring tea is the perfect refreshing drink for this time of year.
And green tea desserts and cookies are a yummy option, whether for afternoon tea or snacks.
Among popular tea varieties is finely powdered matcha green tea. This originated in China during the Sui Dynasty (AD 589-618) and was taken to Japan in 1191 by a Japanese monk.
Matcha is made from the leaves of tea bushes that grow in shade, with only the finest buds hand-picked. Much of any bitter taste is lost in the steaming process.
As well as a beverage, the emerald green powder is used to flavor and color foods such as mochi rice cakes and soba noodles, as well as many cookies and desserts.
With their elegant color and mellow taste, and often coming in low-calorie options, matcha desserts are especially popular with females.
Shanghai Daily went on the trail of some matcha goodies in City Shop.
