Choose correct wine for crustacean feast

Now that it’s the season for the hairy crab gourmand to crack a crab shell and savor the delicate meat and the orange-hued roe, the question becomes what else to put on the table.

Usually hairy crab is accompanied by vinegar with crushed ginger to cut through the richness and traditionally washed down with warmed huang jiu, or Chinese yellow wine.

Hairy crab is considered a food of yin (“cold”) energy while traditional Chinese medicine suggests huang jiu is a yang (“warm”) drink that can warm up the body and balance out the yin. In TCM, yin and yang represent opposite but complementary powers.

If huang jiu is not to your taste, Sherry is one good substitute.

It has qualities similar to those of huang jiu and can be harmoniously paired with crab meat and roe.

  Sandeman Dry Sherry

Origin: Spain

Price: 155 yuan (US$25.25)/750ml

Description: Sherry is a fortified wine produced near the town of Jerez de la Frontera in the south of Spain. And Sandeman is well-known brand providing wines of good quality. This sherry is in pale straw yellow color. It is light and fruity on the palate with a fresh, dry finish.

  Gu Yue Long Shan Shaoxing Wine (10 Years)

Origin: China

Price: 96 yuan (US$15.64)/500ml

Description: Shaoxing wine is one of the most famous varieties of huang jiu, fermented from rice. It originated from Shaoxing, Zhejiang Province. Gu Yue Long Shan uses quality glutinous rice, wheat and water from Jianhu Lake and traditional brewing techniques with a history of thousands of years. It is reddish brown in color and of mellow taste.

  Alvear Moscatel Sherry

Origin: Spain

Price: 98 yuan (US$15.97)/750ml

Description: Moscatel Sherry is made from Muscat grapes, which have a pronounced sweet floral aroma. This Sherry is of amber color, clean and bright. It is considered a dessert sherry but nicely integrated with acidity. It is also easy to drink.

   Harveys Bristol Cream Sherry

Origin: Spain

Price: 170 yuan (US$27.70)/1,000ml

Description: Harveys Bristol Cream is deep golden and amber color with clean, fresh and tangy dried fruit aromas. It has a smooth, mellow and earthy flavor.

  Shanghai Shikumen

Origin: China

Price: 25.5 yuan (US$4.15)/500ml

Description: The brewing company, Jinfeng Wine, has a history of more than 60 years. It is also the biggest huang jiu brewing company in Shanghai, and is popular with locals. It is mellow in taste and has a pleasing fragrance.
