Executive chef at Twelve at Hengshan, A Luxury Collection, Shanghai

Veteran chef Robert R. Brown comes from a small town in the Canadian Rockies. He started his international hotel career in the world famous Banff Spring’s Hotel. For three decades, he has left his culinary footprint in numerous destinations — including Shanghai, Hong Kong and Taiwan — and became familiar with a wide variety of international cuisines.

“Food is life, food is art, food is passion,” the chef remarked.

The Twelve at Hengshan hotel has four restaurants and lounges, including Tops & Terrace which serves French, Mediterranean and Asian fares from breakfast to dinner, both buffet-style and a la carte.

Overlooking the splendor of Hengshan Road, the restaurant was designed like a Parisian boulangerie with three open kitchens and cabana seating on the terrace. The open kitchen features a French style rotisserie oven with an adjacent pizza oven.

The restaurant provides an outdoor dining experience where guests can sit in the open air or at one of six gazebos. On Sundays, the restaurant offers up the freshest seafood, including oysters, crab and lobster paired with fine champagne.

With extensive experience in global trends, menu planning, as well as training and inspiring others, Brown has a strong background in providing exceptional leadership while directing multiple food and beverage outlets simultaneously.

“With a passion for customer service, I’m committed to producing a consistent and quality culinary experience, that every guest leaves happy,” the chef said.
