Culinary reminder of the Titanic

ON the evening of April 14, 1912, first-class passengers on the Titanic finished a private dinner, a 10-course extravaganza said to have cost the equivalent of US$12,400. Hours later, on the morning of April 15, the Titanic sank after striking an iceberg.

Modern-day local diners wondering what the delicacies those Titanic passengers were served tasted like need wonder no longer.

A menu was recovered from the Titanic for the night of April 14, and in a bid to recreate these past culinary glories, Albert Thony, executive chef at Shanghai Marriott Hotel Changfeng Park is offering a "First-class Dinner on the Titanic" this month.

It's a 10-course menu, featuring classic European flavor - for example, hors d'Oeuvre oysters (raw oysters served with cream), poached salmon with Mousseline sauce and cucumber and pate de foie gras celery.

The dessert plate "Waldorf pudding, fresh ice cream and peaches in Chartreuse jelly" combines artistic presentation and a sweet yet refreshing taste and is especially recommended.

Thony uses crystal-like hard candy to represent the iceberg and the fruit jelly is in the shape of the passenger liner - graphically illustrating the tragic story of the Titanic.

While most of the courses are based on the recovered menu, Thony has made some slight changes out of health considerations.

"When I looked at the Titanic menu I focused on the ingredients and flavors," says Thony.

While sticking to the vintage classic with its lavish and luxurious tastes of 100 years ago, I altered a few things to match up with people's tastes nowadays, such as using less cream and butter."

Those eager to experience "the last meal on the Titanic," should consult with the chef in advance, as he needs time to prepare the ingredients. The price varies according to the cost of the ingredients.

Thony has also prepared a four-course dinner for 688 yuan (US$109) plus 15 percent, featuring classic dishes from the original Titanic menu - including cold asparagus vinaigrette, consommé Olga soup, lamb with mint sauce, green peas and potatoes and Waldorf pudding.

Guests ordering Titanic dinners can enter a lucky draw to win a weekend night's accommodation in the hotel's Deluxe Park View room with breakfast for two and two tickets of the "Titanic" 3D movie.
