Delicious and simple to make spicy Thai pomelo salad

Most expats in China, in the early stages of their sojourn in the Middle Kingdom, wander around a wet market, overwhelmed by a cornucopia of unfamiliar ingredients thinking: “Just what is that?!”

For many, pomelo is included.

Native to South Asia and the largest member of the citrus fruit family, pomelos are a wonderful balance of bitter and sweet. With a thick skin, plenty of pith, and white — sometimes red — flesh, for many they resemble sweeter grapefruits. And like grapefruits, they go well with your morning yogurt or can be the star of a healthy, refreshing salad.

With no fat, plenty of potassium, and ram packed with vitamin C — a single pomelo can provide nearly 200 percent of your recommended daily dose — pomelos make a great addition to your diet. So try this delicious and easy spicy Thai pomelo salad to get you going?

Ingredients

1 medium pomelo

1 small red onion

1 fresh red chili

¼ glass of chopped coriander

¼ glass of chopped shallots

¹/³ glass of unsalted peanuts

1 tablespoon of light soy sauce

1 clove of garlic (finely chopped)

1 teaspoon of palm sugar

1 tablespoon of lime juice

Instructions

1. Peel off the pomelo’s thick skin and pull away the foamy pith that surrounds each segment. Remove the thin skin of each pomelo segment and roughly break into bite-size pieces.

2. Cut the red onion into thin strips.

3. In a dry frying pan, roast the peanuts until they turn a golden brown. Place the nuts to one side and allow to cool before chopping finely.

4. Remove the seeds of the chili and discard — they’re the hottest part. Now deseeded, finely chop the chili.

5. Mix the palm sugar with the lime juice in a large bowl, add the pomelo pieces, the chili, coriander, shallots, soy sauce and garlic. Mix well to combine.

6. Before serving add the onions — adding them earlier would mean they lose their crunch — and sprinkle with peanuts.
