Luxurious Brittany Blue Lobster at JW Marriott

THE award-winning culinary team of JW Marriott Hotel Shanghai Changfeng Park is pleased to introduce a selection of Western dishes using the exquisite blue lobster from Brittany.

Enjoy the highly-prized lobster prepared in a variety of enticing ways at DÔME Steak and wine, including lobster carpaccio (fine sliced raw Brittany live blue lobster, whole, organic mixed greens, tobiko caviar and vinaigrette), lobster thermidor (Brittany live blue lobster, whole, champignon mushrooms and brandy creamy sauce) and steamed lobster with ginger and garlic sauce. Far more flavorful than most other types of lobster, blue lobster is renowned for its unique blue color shell, succulent flavor and firm texture.

Chef Yuen Man has been in the industry for more than 26 years. His culinary career has brought him throughout the world with an extensive and impressive list of hotels in Hong Kong, Portugal, Philippines, Malaysia, Egypt and China.

He joined Marriott International in 1989 in Hong Kong. Prior to his current position, he had been the Executive Chef of JW Marriott Hotel Cairo for 6 years.
