MATTO, a newly opened Italian restaurant run by Naples chef Enzo Carbone distinguishes itself through its Neapolitan-style pizzas.
The restaurant has a stylish interior design: Natural wood, travertine from Italy and a tin-covered ceiling create a cozy ambience with a subtle sense of fun. One wall displays many of the chef's imported ingredients.
It offers made-to-order pizzas, based on fresh quality ingredients - many of which are imported from Italy. Whether it's mild, milky buffalo cheese from Campana or juicy cherry tomatoes, these create the authentic Napoli flavor and texture, featuring a comparatively soft and thick crust with a bit of charcoal on its edge, plus a juicy flavorful yet not heavy topping.
To create an authentic texture crust, Carbone had a bespoke pizza oven capable of reaching top temperatures at around 400 degrees Celsius made in Italy and shipped to Shanghai.
We recommend two of their signature pizzas. The classic margherita - pizza topped with basil, mozzarella cheese and grana padano - is a top traditional choice. And for diners pursuing rich flavors, the Marinara Caputo - a pizza topped with garlic, oregano and pecorino - deserves a try.
In addition to pizza, an Italian restaurant wouldn't be authentic without pasta, and Carbone obliges.
"I know that many locals with the tradition of eating Chinese noodles are not used to the texture of Italian pasta - firm and chewy, even tasting slightly under-cooked. But expressing authenticity is this restaurant's concept, so I will not compromise," says chef Carbone, who has lived for more than 10 years in Shanghai.
Customers should try the gnocchi - potato gnocchi with sausage, tomato, basil and provola cheese - and fettucine - egg pasta with mushrooms and cream.
In addition, Matto provides a wide range of appetizers, from light and refreshing Capri (cherry tomatoes served with oregano, mozzarella, basil and extra virgin olive oil) to Parmigiana (Napolitana eggplant parmigiana with grana padano, tomatoes, basil and mozzarella) featuring rich textures and intense flavors.
Matto also offers lunch option. Solo Matto (98 yuan/US$15.38) includes a starter, a main course of pizza or pasta. Tutto Matto (128 yuan) gives a starter as well as a grilled main course. Both are served with soft drink or Italian coffee.
