Jiangnan (region south of the Yangtze River) cuisine takes its cues from the season and is therefore extremely nourishing for the body. Highlights include double-boiled pork with fresh Longjing green tea from Hangzhou; blended red clam with minced fragrant Chinese chives; and Shanghainese salted pork soup (yan du xian), a nourishing home-style spring broth enriched with bamboo shoots and dumplings.
