The pride of Gascon spices up Jade on 36

BETTER food, better wine and vice versa. A wine dinner presented by Michelin star French chef Pascal Aussignac at Pudong Shangri-La East Shanghai highlights the city’s May dining calendar.

Aussignac will prepare a six-course dinner paired with six wines on May 19 and 20 at Jade on 36, the hotel’s upscale French restaurant.

“Pudong Shangri-La is well known throughout the city and internationally for its fantastic food and beverage offerings. We are bringing some of the best of France and chef Aussignac’s success is a clear match to what we want to constantly provide our guests,” said Peter Clarke, the hotel’s general manager.

Aussignac, born in Toulouse, southwest France, is a restaurateur and the chef of Club Gascon in London, holding one Michelin star. He is known for highlighting seasonal dishes and for innovative cuisine based on rustic French heartiness.

“This is a chef who goes against the current London grain, who has little appetite for novelty, who doesn’t even try to reinterpret old dishes,” said The Times magazine from UK.

“My philosophy is implicit in the restaurant name (Club Gascon) itself, showcasing the Gascony region of France,” Aussignac said in an e-mail interview.

The phrase douceur de vivre in France is used to express the sweetness of life in Gascon, home to foie gras, fine charcuterie, wines of Bordeaux and Armagnac (a local alternative to Cognac).

Aussignac plans to serve his “surf and turf” signature dishes at Jade on 36. The six-course menu is highlighted by pressed foie gras and crab with pastis and spicy tomato coulis, cappuccino of black pudding with lobster and asparagus, and charolais beef with caviarand XO sauce.

“All three dishes are defined by their strong flavors and marriage of ingredients stemming from southwest France. I like to combine things that aren’t normally compatible and to play with interesting flavor and combinations. Duck heart, tulips and piment d’Espelette are my favorite ingredients,” he said.

Aussignac’s knowledge of wine has him naturally thinking about how each dish will pair with local vintages.

“We are lucky that our area of France is surrounded by great vineyards so that taking diners on a real discovery of regional French wines is a huge consideration when designing menus at Club Gascon,” he said.

Furthermore, he believes dining is only complete when the smell, taste and sight combine to perfection. Aussignac is also a stickler for table settings, especially flower arrangements.

He goes to New Covent Garden flower market in London to choose the flowers that work best for the time of the year. He also plans to look after the flower arrangements for the tables at Jade on 36 while in Shanghai.

Shangri-La Pudong will hold two other wine dinners on May 23.

Jade on 36 will host the diner featuring wines by the well known French producer E. Guigal. Guigal is known for improving the international reputation of wines from Cote-Rotie in the northern Rhone.

Gui Hua Lou, the hotel’s Chinese restaurant, will host a dinner with Champagne by Lallier.
