Western dishes with Chinese flare
NEW culinary sparks are flying this month at the Fairmont Peace Hotel's Chinese kitchen, which showcases Western ingredients such as oysters, foie gras and sea bass cooked Chinese style.
Nine Chinese dishes based on Western ingredients are featured through the end of April, including Shanghai, Sichuan and Cantonese regional cuisines. For example, wok-fried halibut roll with yuxiang sauce (using Sichuan spices and spring onion) at 298 yuan (US$47) features sour, sweet, salty and spicy flavors.
French belon oyster cooked with Chinese rice wine (448 yuan) is based on Shanghai's tradition of cold dishes. Wok-fried rice with foie gras (108 yuan) is Cantonese style.
"It's not fusion since we pursue authenticity in flavor while the Western influence is shown more by presentation," said Steven Liu, the hotel's executive sous chef.
Chef Liu said he aims to enlarge the scope of Chinese cuisine, give locals new perspectives on Eastern flavors and attract foreigners whose experience with Chinese food is limited to sweet-and-sour and Western-friendly tastes.
"Many western celebrity chefs represented by Jean Georges are Asian-influenced, which gives their food more diversity, while some Chinese chefs are limited in following the tradition and are not open enough to foreign food culture," he said.
The hotel's kitchen team has found that many river fish used in Chinese cuisine can be replaced by Western seafood, which are sweeter and firmer than river fish. Western ingredients also acquire different tastes when prepared with Chinese spices and cooking methods, especially wok-frying. A classic example is pan-fried Australia lamb chops with cumin spice (198 yuan).
Chi Qi, the assistant manager at Dragon Phoenix, the hotel's Chinese restaurant, has selected light Burgundy wines including La Vignee chardonnay from Bourgogne AOC (140 yuan/glass) and Pinot Noir from Cote de Beaune (160 yuan/glass) to pair with those dishes.
