Ada shares pancake tips in jail
A scallion pancake vendor Wu Gencun, better known as Ada, was invited into the Nanhui Prison yesterday to teach prisoners how to make pancakes.
It was part of the prison’s efforts to teach vocational skills to convicts so as to help them find jobs or start their own businesses after they are released.
Six men and six women took the training taught by Ada in two batches.
Ada displayed the whole process of making his highly popular scallion pancakes and generously told them the secrets of every step, including choosing ingredients, kneading dough, brushing oil and baking.
Before this class, Ada had visited the prison twice in advance to make preparations and spoke about his personal story in front of the prisoners to encourage them that they could also achieve change as long as they are down to earth and work hard with honesty and grit.
A prisoner surnamed Li said he really appreciated the opportunity to get a place in the class.
“In the past a few years, I kept thinking about a problem: how could I make money and raise my family after I leave the prison,” he said.
“When the prison staff told me about this training class, I registered immediately. If I cannot find a job after returning home, I can be a vendor like Ada.”
Another prisoner surnamed Luo said she was impressed by Ada’s commitment to develop his recipe and skills over decades to establish his famous brand.
“One reason for me to be here today was that I feared hardships and fatigue and tried to take shortcut,” Luo said. “I will learn carefully and hope I can make a living independently.”
Prison authorities said inmates enthusiastically applied for places and they would arrange more classes in the future.
