Big plans for heritage bean-curd plant

A company famous for fermentation has brewed up a plan to preserve its heritage building for posterity.

The original site of Shanghai’s earliest food fermentation company will be turned into an exhibition center, it said yesterday.

The Shanghai Dingfeng Fermentation Food Co, which was built in suburban Fengxian District in 1864, will be relocated to a new site nearby.

The company is famous for its fermented bean curd, a traditional breakfast side dish, as well as soy sauce, wine and other fermented edibles.

The skill set needed to make the dish has been listed as an intangible heritage of Shanghai.

“The major facilities in the factory will be kept as a historic exhibit for the public after renovations,” said Dong Le, deputy manager at the Nanqiao New City construction and development company.

The new attraction will center around the company’s food-making history, but it will also showcase the district’s other intangible heritages, and serve as a community centre and entertainment venue.

The company’s operations will be relocated to a new site in neighboring Zhuanghang Town, where 350 million yuan will be spent constructing a facility covering about 45,000 square meters.

No opening date has been set for the exhibition center.
