SONGJIANG perch, a tasty fish species that vanished from the city nearly 30 years ago, is expected to return to Shanghai tables next month.
A company, set up by Fudan University researchers and dedicated to an artificial breeding program of the perch for a decade, has been granted a business license from Shanghai Fisheries Office, company officials said yesterday. A tasting event will be held next month to mark the comeback of a species that is endangered in the wild. The company is now looking for cooks and recipes to revive the original taste of the former state banquet dish.
