‘Uncle No Name’ has family coffee shop feel

BEN Evans, an Australian native working in logistics, started a coffee venture six years ago in Shanghai because he couldn’t get a decent cup of coffee.

The café he opened on Fengxian Road, an “Uncle No Name,” is based on a Melbourne-style coffee model with beans roasted at a high level. Melbourne’s roasters and baristas are some of the most accomplished and technical on Earth. The coffee usually features sour notes and a sweet taste afterward.

His dedication to premium-quality coffee has drawn coffee connoisseurs and food and beverage talent to join, developing dessert and brunch items coherent to his core value.

Evans has kept one “Uncle No Name” espresso on Yongkang Road and newly opened a bistro on Huangpi Road S.

“Being established for half a decade, ‘Uncle No Name’ now ventures further to bring not only premier coffee but also comfort food close to the people,” he said. “Coffee brings people in the door but good food keeps them there.”

Evans found a good team and is confident about this new venture. Some dishes have been carried over from Evans’ native country but the seasonal menu raises the game, with strong culinary skills from head chef Holly Lian and pastry chef Zoe Chen.

Chef Lian gained her skills in France and experience working for one Michelin-starred restaurant Le Jules Verne, two Michelin-starred restaurants Le Grand Vefour and Akrame, and later a two Michelin-starred restaurant Kadeau in Copenhagen before returning to China.

She said the purpose at “Uncle No Name” is to offer comfortable bistro experience at very affordable prices. Under her supervision, the kitchen whips up some tasty plates, including mini egg and cheese burger with bacon, sardine on toast and chilled truffle somen (a type of udon) with onsen egg. There is a touch of Mediterranean in the sardine toast and a hint of Japan in the truffle somen yet the essence of the menu is to bring out the flavors and leave diners satisfied.

Another highlight is the not-to-be-missed dessert selection, created by talented pastry chef Chen. Words are not enough to describe the sensation when biting her signature pavlova or rhum baba. Her twist on the Aussie’s favorite meringue-based pavlova or French classic rhum baba is evident and pleasant.

“‘Uncle No Name’ offers a different lunch and brunch menu targeting different clientele,” Evans said. “The ambience is changed from morning to evening. We also often organize wine pairing dinners to elevate the experience.”
