This summer, L'Atrium Restaurant at Grand Mercure Hongqiao is adding a series of fresh and delightful gourmet salmon dishes to its Grand Dinner Buffet for a romantic rendezvous under the moonlight.

The executive chef is selecting fresh salmon imported from Norway and creating a wide range of salmon dishes that are inspired by his travels around the world.

Start off with light appetizers such as salmon maki, salmon tartar or warm salmon nicoise salad - salmon in a bed of lush green lettuce, sweet tomatoes and vinaigrette sauce.

For something more substantial the main course selection includes salmon steak, salmon quiche and grilled salmon medallion with fine herbs and citrus butter sauce. For Asian food lovers there is salmon fish head curry, salmon and oyster gratin, mini salmon skewers with condiments and more.

Diners can experience the rich, juicy and totally healthy salmon in every possible way.

Apart from the salmon specialties, the buffet is also filled with the usual sumptuous international features such as pasta, mustard-rolled chicken, roasted sirloin or cheese platter.

Capping off the magnificent dinner spread at the dessert station is a sweet medley of chocolate mousse, brownies, tarts and assorted pastries including cookies-and-cream cheesecake, as well as banana coconut pudding, mango pudding and berries compote.

The restaurant with a beautiful spacious interior has updated its menu this summer.

New additions include crisp egg stuffed with slightly scrambled egg, mashed green pea and toast bread in truffle and duck liver, fruit cannelloni with light spicy jelly served on a pistachio cookie, dressed with foamy yoghurt and lemon sherbet, and tortilla in emulsion of potato, emulsion of Iberico ham, diced potatoes, mascarpone and melted onions.

The hotel has announced several new dishes this season.

With bright red mixing with a little green, the appetizing braised mushroom and pigeon meat in tomato broth definitely matches the hot and colorful summer. The pigeon's gravy that comes from the careful braising and brewing, a culinary method Cantonese cuisine is famed for, perfectly blends with the fresh tomato juice.

Female diners might fall in love with double-boiled assorted mushrooms and bamboo pith in papaya. This sweet and sour stew features fresh papaya, which is in harmony with the rich-flavored chicken soup while the mushroom adds fragrance to the dish.

Wok-fried crab meat and roe with egg white and fresh milk is a classic combination of East and West. The crisp fried chip at the bottom is loaded with tender crab meat and roe wok-fried with diced egg white and fresh milk.

Sauteed prawns and walnut with XO sauce is a traditional Cantonese dish. The spicy XO sauce is loaded with shrimp roe, which makes the dish taste rich. It might even win love from old Shanghai locals, because shrimp roe has been a classic food in the city for the past 100 years.

A little sweet and a little spicy, the dish is matched with silky milk and ginger jelly, perfect for the elderly as according to traditional Chinese medicine ginger can dispel the human body's inner coldness, which can be easily accumulated in an air-conditioned room during the summer.

The hotel's new summer dishes are tantalizing to taste buds.

Nothing is better during a hot summer than a fresh, flavorful, all-natural and organic salad. Its classic Caesar Salad includes romaine lettuce, poached egg, anchovies, bacon and croutons, tossed with classic anchovy dressing and top with grilled prawns and grilled chicken.

Tomato soup, the chilled consommé, served with pickled vine cherry tomato and balsamic jelly, is a pleasant culinary experience.

Poached in Riesling and vanilla syrup served with yoghurt hazelnut sponge and vanilla ice cream, the delicate poached peach is a refreshing dessert, while the Desire, a hazelnut cake with Valrhona chocolate and pistachio, topped with two cute cherries, will help make this summer sweet and cheerful.
